Mention minimal SMTP configuration in README.md (#2144)

Looking at d1dbc77e0b/.config/smtp.config.php
it is clear that `SMTP_HOST`, `MAIL_FROM_ADDRESS` and `MAIL_DOMAIN` must be set.
