I've learned this from the Jitsi config that you don't have to add a
variable if the key name is the same in the compose file
as it is in the .env file

Docker-Mailserver

This project comes with an additional environment file. I recommend that you get it from their Github project since that will be the most up to date version. https://github.com/tomav/docker-mailserver
